This incredible bread will surely make your day extra special! Serve it with your favourite cup of coffee and you have yourself a snack to remember! 3 Eggs, lightly beaten
1 c vegetable oil
3 tsp vanilla extract
2 ¼ c white sugar
2 c shredded zucchini
3 c all-purpose flour
1 tsp salt
1 tsp baking powder
¼ tsp baking soda
1 tbsp ground cinnamon
1 pint fresh blueberries
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in four mini-loaf pans.
Add eggs, sugar, and vanilla into a large mixing bowl. Beat until well combined.
Add the zucchini and stir until just mixed.
Add flour, baking powder, cinnamon, baking soda, and salt. Beat until well mixed.
Add the blueberries and stir until just mixed.
Pour the batter into the prepared pans and spread it evenly.
Place them inside the preheated oven and bake for about 50 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and allow loaves to cool at room temperature for at least 20 minutes.
