Fried Catfish

ingredients :

°400 gm catfish fillet

° cup 130 ml contains yogurt (or milk)

°130ml cup of cornmeal (yellow)

°cup 130 ml contains flour

°1 teaspoon freshly ground black pepper

°1/2 teaspoon kosher salt

°1/4 teaspoon paprika

°1/8 teaspoon hot pepper

°1/8 teaspoon garlic powder

°1/8 teaspoon onion powder

°130 liters of oil (more if needed)

* Preparation :

cleaning fillet & catfish (removing all dark meat); soaking in yogurt or milk about 1-2 h; drain well.

Sprinkling fish with salt, pepper & herbs.

Dipping in cornmeal & flour mixture. Cook in a small saucepan with 130L of oil, being careful not to overload the fillets, perhaps by half.

Fry for 6-8 minutes, watching closely so as not to burn, turn once.

Serve with lemon tracnhe if wanted .
