This is an amazing one-pan dish made with my favourite assortment of Italian sausages, a mixture of peppers, and loads of onion with the most flavorful sauce. Perfect to serve sandwiches, over pasta, etc. And this Italian Sausage and Peppers freeze well. A staple at home and one of our favourite comfort food.

Ingredients

20 ounces sweet Italian sausages, (5 sausages)

1/4 c. olive oil

1 large onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1/2 teaspoon salt

1/2 teaspoon ground black pepper

5 cloves garlic, minced

1/4 c. tomato paste (4 tablespoons)

1/2 c. red wine, on the drier side

1 14.5-ounces can diced tomatoes

2 tablespoons chopped fresh parsley

1 teaspoon dried oregano

1/2 teaspoon dried thyme

2 large basil leaves, chopped
