Lemon Butter Sauce:
2 garlic cloves, minced
8 tablespoons butter
1/4 teaspoon ground black pepper
1/4 c. chicken broth
1/4 c. lemon juice
How to make Lemon Chicken with BEST Lemon Butter Sauce
Step 1: In half lengthwise, slice the chicken breasts. Then, using a meat mallet, lightly beat the chicken breasts to even thickness.
Step 2: Place the egg mixture ingredients in a bowl. Mix well until combined.
Step 3: Whisk the Parmesan mixture ingredients in a different bowl until well combined.
Step 4: Into the egg mixture, dip the chicken, then dredge in the Parmesan mixture. Let the excess drip off.
Step 5: Pour in enough oil to cover the bottom of a large skillet. Add the chicken to the hot oil and cook for about 4 to 5 minutes on each side until golden, crispy, and cooked through. The chicken is done once its internal temperature reached 165 degrees F. If the chicken browns too quickly, decrease the heat.
Step 6: In the meantime, melt the butter in another saucepan. Once melted, add the garlic and cook until aromatic. Pour in the chicken broth, then add the lemon juice and pepper. Cook the sauce for approximately 2 minutes.
Step 7: Over the cooked chicken, pour the sauce, then toss to coat. Serve the chicken garnished with some lemon slices and finely chopped parsley. Enjoy!
