Quesadillas

These quesadillas are the best comfort food filled with two varieties of gooey cheese, savoury, fajita-style chicken, and sauteed pepper filling. It’s so darn great, I’m sure everyone will ask for it again and again!

Ingredients

4 teaspoons olive oil, divided

3 tablespoons butter, melted

1 1/4 pounds boneless skinless chicken breasts, diced into 1/2” cubes

1 teaspoon ground cumin

2 teaspoons chilli powder

2/3 c. chopped red onion

2 garlic cloves, minced

1 tablespoon fresh lime juice

6 (10” burrito size) flour tortillas

6 ounces Monterrey jack cheese, shredded (1 1/2 c.)

6 ounces cheddar cheese, shredded (1 1/2 c.)

Guacamole, sour cream, pico de gallo, or salsa, for serving (optional)

2 c. chopped bell pepper (I use red and green)

Salt and freshly ground black pepper

How to make Quesadillas

Step 1: Coat the chicken in a mixture of chilli powder, cumin, salt, and pepper.

Step 2: In a 12-inch nonstick skillet, heat 2 tsp olive oil over medium-high heat. Add the chicken to the hot oil and cook for about 6 minutes, turning often until completely cooked. Shift the chicken to a medium-mixing bowl once done.

Step 3: In the same skillet, heat the rest of the 2 tsp oil. Add the bell pepper and red onion. Saute for approximately 6 minutes or until soft. Stir in the garlic and cook for a minute more. Transfer this to the bowl with the chicken. Add the lime and toss to coat the chicken.

Step 4: With melted butter, brush the top side of each tortilla. Wipe the skillet clean using paper towels, then heat on medium heat.

Step 5: Combine the cheeses.

Step 6: Place the tortilla to the skillet buttered-side down. Evenly sprinkle half of the cheese on the one-half side of the tortilla, then about 3/4 cup of the chicken mixture and fold the tortilla. Cook for about 2 minutes until the bottom of the tortilla is golden brown. Flip and continue to cook the other side until golden brown. Do this for the rest of the tortillas, cheese, and filling.

Step 7: Before serving, slice each tortilla into 2 to 3 pieces. Serve right away with your favourite toppings. Enjoy!

Notes:

I recommend using freshly grated cheese if time permits. If not, you can also use pre-shredded Mexican blend cheese. Just make sure to look for thicker shreds.
