How to make Sicilian Meatloaf

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: In a medium skillet, heat the olive oil over medium heat. Once the oil is hot, add the onion and red pepper to the skillet. Saute for approximately 5 minutes until the onions are translucent. Add the garlic and continue to cook until aromatic. Take off the heat and cool slightly.

Step 3: Place the ground beef, bread crumbs, Parmesan, eggs, tomato paste, salt, pepper, parsley, and vegetable mixture in a large mixing bowl. Mix well using your hands until combined.

Step 4: Lay a large sheet of parchment paper on the counter and place the meat mixture in the middle, patting it out to make an 8 x 15-inch rectangle. Top with a layer of ham, basil, and cheese. Keep in mind to leave at least an inch border around the meat mixture.

Step 5: Roll the meatloaf up beginning at the 8-inch end like a jelly roll, using the parchment paper as a guide. To seal, press down on the top seam, then the ends together. And place on a baking sheet lined with parchment paper.

Step 6: Put in the preheated oven and bake for about an hour. Take the meatloaf out of the oven. Let it rest for at least 10 minutes before slicing.

Step 7: If desired, serve the meatloaf topped with pasta or zucchini noodles and marinara sauce. Enjoy!
