How to make Skillet Italian Sausage and Peppers with Whole-Wheat Penne

Step 1: Cook the pasta in a large pot of salted water until al dente. Make sure to set aside the starchy cooking water when done.

Step 2: In a large skillet, heat 1 tbsp olive oil over medium-high heat. Once the oil is hot, add the sausages into the skillet and cook until almost cooked through. When done, remove the sausages from the skillet and slice each into 1/4-inch pieces.

Step 3: Drizzle another tsp of olive oil in the same pan. Add the peppers and onion and saute for approximately 5 minutes until a bit softened. Place the sausages back in the pan and pour in the red wine. Stir to deglaze the pan.

Step 4: Now, add the tomato paste followed by the tomato sauce, water, Italian seasoning, sugar, and salt. Stir well and bring to a boil. Once boiling, decrease the heat and simmer for about 10 minutes.

Step 5: To the skillet, add the penne and toss. Add the starchy pasta water if the sauce turned out too thick.

Step 6: To taste, season with salt and pepper. Serve garnished with some grated Parmesan cheese. Enjoy!

Store any leftovers in the fridge, covered.
