shortbread crust

½ c (113 grams) Unsalted Butter (room temperature)

1 c (125 grams) All-Purpose Flour

¼ c (32 grams) Powdered Sugar

lemon curd filling

½ c Lemon Juice (2-3 lemons)

1 tbsp Lemon Zest, finely grated

3 Large Eggs, room temperature

1 ½ c (319 grams) Granulated Sugar

½ c (72 grams) All-Purpose Flour, sifted

Powdered Sugar (for dusting)


For the Shortbread Crust:

Step 1: Apply cooking spray in an 8×8-inch baking pan.

Step 2: In a large mixing bowl, add butter, powdered sugar, and flour. Beat until well combined.

Step 3: Transfer the dough into the prepared baking pan and press onto the bottom.

Step 4: Place it inside the freezer for 15 minutes.

Step 5: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 6: Put the baking pan inside the preheated oven and bake for 15 minutes or until the crust turns golden brown.

Step 7: Remove from the oven let it sit at room temperature to cool completely.

To Make the Curd Filling:

Step 1: In a small mixing bowl, add the grated lemon and its zest.

Step 2: Add the lemon juice as well. Stir until well mixed.

Step 3: In a small mixing bowl, sift the all-purpose flour.

Step 4: Mix the lemon mixture, sifted flour, eggs, and granulated sugar until well combined.

Step 5: Spread the lemon curd over the crust.

Step 6: Place it inside the preheated oven and bake for 30 minutes or until done.

Step 7: Remove it from the oven and let it sit at room temperature to cool.

Step 8: Cover and put it inside the fridge for 1 hour to chill.

Step 9: Sprinkle powdered sugar on top and slice it into small bars.
