These easy Butter Pecan Cookies are moist and very pretty !! Will definitely melt-in-your-mouth and can be served for any occasion!
INGREDIENTS
– 3/4 cup pecans, chopped
– 1/2 cup (1 stick, 112 g) unsalted butter, room temperature
– 1/3 cup (70 g) sugar
– 1 teaspoon vanilla extract
– 1/8 teaspoon salt
– 1 cup (140 g) all-purpose flour
DIRECTIONS :
STEP 1 :
To Make cookie dough, beat the butter using an electric mixer for 1 minute then add 1/3 cup of sugar and beat for an additional 1 minute, or until light. Next, you may beat in vanilla, salt, and flour, scraping down sides of bowl, just until dough comes together. Fold in pecans.
STEP 2 :
Roll into balls: Separate dough into 12 pieces; squeeze dough to shape into balls. Make sure to place, 3 inches apart, on a baking sheet.
STEP 3 :
Once done, gently flatten with the bottom of a glass (if necessary, you may reshape sides).
STEP 4 :
Now, bake at 350°F (175°C) for 15 minutes until golden brown, rotating sheet halfway through. Then immediately cool cookies on a wire rack.
