Crumbly Lemon Bundt Cake with Glaze

Ingredients:

3 cups all-purpose flour

2 ⅓ cups white sugar

1 ½ teaspoons baking powder

2 teaspoons salt

1 ½ cups milk

3 large eggs

1 cup of vegetable oil

½ cup lemon juice

1 tablespoon lemon extract

2 teaspoons vanilla extract

1 ⅓ cups confectioners’ sugar

¼ cup white sugar

¼ cup of orange juice

2 tablespoons milk

1 tablespoon lemon extract

1 tablespoon lemon juice

¼ teaspoon vanilla extract

Directions:

Step 1: Prepare the oven and preheat to 165 degrees C or 325 degrees F.

Step 2: In a large mixing bowl, sift the baking powder, 2 1/3 cup of white sugar, and salt.

Step 3: In another mixing bowl, add the eggs and 1 1/2 cups of milk. Whisk until well mixed.

Step 4: Add in 1/2 cup lemon juice, vegetable oil, 2 teaspoons of vanilla extract, and 1 tablespoon lemon extract. Whisk until everything is smooth.

Step 6: Transfer the flour mixture in and whisk until well combined.

Step 7: Transfer the milk mixture into a tube pan.

Step 8: Place inside the preheated oven and bake for 1 hour and 20 minutes or until a toothpick comes out clean after inserting in the middle of the cake.

Step 9: Remove from the oven and let it sit at room temperature to cool for about 10 minutes.

Step 10: Run a knife on the edges to loosen the cake. Invert and let it out of the pan to a clean plate.

Step 11: Place a saucepan on the stove and add in the orange juice, confectioners’ sugar, 1/4 cup white sugar, 1 tablespoon lemon extract, 1 teaspoon vanilla extract, and 2 tablespoon milk. Turn the heat to medium and allow the mixture to boil.

Step 12: Remove from the heat right away once it boils. Drizzle the mixture on top of the cake and allow it to harden for 10 to 20 minutes.

Step 13: Serve and enjoy!

Notes:

Make sure that the powdered sugar is completely dissolved and lumps are gone for a creamier glaze.
