I love how I can make this very beautiful cake at home. I was intimidated at first, but it is super easy to whip up. Moist, decadent, and zingy lemon blueberry cake that will surely steal the show!

Ingredients

Cake:

1 ½ teaspoon baking powder

1 2/3 c. granulated sugar 333 grams

1 ¾ c. all-purpose flour 210 grams, plus 1 tablespoon to coat berries

3 Egg whites room temperature

1/2 c. sour cream 120ml, room temperature

1/2 c. whole milk 120ml, room temperature

⅓ c. lemon juice 60 grams, fresh

3/4 c. unsalted butter 170 grams, room temperature

1 tablespoon vanilla extract 15mL

1 1/3 c. blueberries 180 grams, fresh

1 tablespoon lemon zest

¼ teaspoon kosher salt
