1 and 1/3 cups water
1 cup granulated sugar
1/3 cup cornstarch
1/4 teaspoon salt
1/2 cup fresh lemon juice {we used Meyer lemons}
2 teaspoons lemon zest
2 tablespoons unsalted butter, softened
